The 45th Annual ODU Madrigal Banquets, featuring food and music from Spain and Mexico, include full-course historical meals and music provided by the ODU Madrigal Singers, Collegium Musicum, and Sacbut Ensemble. Directed by Bianca Hall.

1st course: Spinach, chard, and almond soup garnished with crème fraiche and herb oil (vegan)
Main course: Roasted chicken breast stuffed with a saffron pork sausage with a smoked corn and Poblano sauce, served with a tri color potato pave, and a fava bean and wild mushroom ragout
Main course vegan option: Stuffed Poblano pepper with vegan sausage, vegan cheese, and black beans, served with a tri color potato pave, and a fava bean and wild mushroom ragout
Dessert: Catalan style rice pudding with orange and raisins (vegan)
